Fruit and berry preparations
Fruit and berry preparations are commonly used in dairy and dessert products. Starch is added for a variety of reasons: to obtain a good consistency, for cost efficiency, and to ensure even distribution of fruits and berries within the final product.
Native potato starch consists of granules that are quite large compared to those in starches from other origins. The size of the granules affects how smooth and glossy the product surface is – with smaller granules producing more gloss.
So at Lyckeby we have developed potato starch products where only the smallest granules are selected, making it possible to even incorporate potato starch into products where a smooth and glossy surface is an important factor. So you can use potato starch, with all its benefits of transparency, colorlessness, and neutral taste, while still giving the fruit preparations the perfect texture and glossy surface.
Of course we don’t waste the larger starch granules! We offer you more cost-efficient solutions by incorporating them into other Lyckeby starch products that are ideal when a glossy surface isn’t a priority, such as products with a higher fruit content. They are also perfect for enhancing a home-made feeling – which can be further reinforced by adding our potato fibers to your product.
For your cold processes, we provide instant starches. These can sometimes pose problems, as they may form lumps when coming into contact with liquid. Consequently, we always recommend that you mix Lyckeby instant starches with other dry ingredients. Where this isn’t possible due to the formulation or process, we offer several of our instant starches in different particle sizes, enabling easier dispersion directly into cold liquid with minimal risk of lump formation.
