Condiments such as ketchup or different kinds of sauces often need to be thickened to achieve the right consistency. They also need to be shelf stable and stay homogeneous throughout the lifecycle of the product. Starch is used to provide viscosity and texture, but also to increase storage stability by preventing separation between the water and the other ingredients in the product.

Native potato starch consists of granules that are quite large compared to those in starches from other origins. The size of the granules affects how smooth and glossy the product surface is – with smaller granules producing more gloss.

So at Lyckeby we have developed potato starch products where only the smallest granules are selected, making it possible to incorporate potato starch even into products where a smooth and shiny surface is an important factor. So you can use potato starch, with all its benefits of colorlessness, cost efficiency, and neutral taste, while still giving the right texture to your smooth, glossy condiment.

Of course we don’t waste the larger starch granules! We offer you more cost-efficient solutions by incorporating them into other Lyckeby starch products that are ideal when a glossy surface isn’t a priority.

Potato starch is naturally transparent, which makes it a very good choice for products such as sweet chili sauce, where the sauce should be transparent but still viscous enough to keep the chili flakes evenly distributed. Using Lyckeby’s high quality potato-based solutions in this type of product allows for a high viscosity sauce with good transparency and great taste, because our potato starches are neutral in taste.

In addition to Lyckeby starches, we also offer potato fiber to provide texture to your products. Using Lyckeby potato fiber as a texturizer enables you to cut ingredient costs by replacing some of the more expensive ingredients such as fresh vegetables.

Our potato fiber also prevents separation issues during storage, due to its excellent ability to adsorb large amounts of water and oil.
